- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup cauliflower rice
- 1 cup shredded cheddar cheese
- 4 large eggs
- 1 cup sour cream
- 1/2 cup green onions, chopped
- 1/2 cup diced tomatoes
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the taco seasoning and cauliflower rice to the skillet, stirring well to combine. Cook for an additional 5 minutes.
- In a mixing bowl, whisk together the eggs and sour cream. Season with salt and pepper.
- Grease a pie dish or baking pan. Evenly distribute the beef mixture in the dish.
- Pour the egg and sour cream mixture over the beef, ensuring it is evenly covered.
- Sprinkle the shredded cheddar cheese on top.
- Bake in the preheated oven for 25-30 minutes or until the pie is set and golden brown.
- Remove from the oven and let it cool for a few minutes.
- Garnish with chopped green onions and diced tomatoes before serving.
