Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup cauliflower rice
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1 cup sour cream
  • 1/2 cup green onions, chopped
  • 1/2 cup diced tomatoes
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add the taco seasoning and cauliflower rice to the skillet, stirring well to combine. Cook for an additional 5 minutes.
  4. In a mixing bowl, whisk together the eggs and sour cream. Season with salt and pepper.
  5. Grease a pie dish or baking pan. Evenly distribute the beef mixture in the dish.
  6. Pour the egg and sour cream mixture over the beef, ensuring it is evenly covered.
  7. Sprinkle the shredded cheddar cheese on top.
  8. Bake in the preheated oven for 25-30 minutes or until the pie is set and golden brown.
  9. Remove from the oven and let it cool for a few minutes.
  10. Garnish with chopped green onions and diced tomatoes before serving.
