Description

- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 1 teaspoon Italian seasoning
- Salt, to taste
- Pepper, to taste
- Grated Parmesan cheese, for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper and add them to the skillet.
- Cook the chicken for about 6-7 minutes on each side until browned and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Pour in the heavy cream, stirring well to combine with the garlic.
- Add the cherry tomatoes and Italian seasoning, stirring to incorporate. Let it simmer for 2-3 minutes.
- Add the fresh spinach to the skillet and cook until wilted, about 1-2 minutes.
- Return the cooked chicken to the skillet and coat it with the creamy sauce. Heat for an additional 2 minutes.
- Serve hot, garnished with grated Parmesan cheese.
