Description

A delicious and creamy low-carb Tuscan chicken dish featuring tender chicken breasts in a rich sauce with garlic, cherry tomatoes, and fresh spinach.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt, to taste
  • Pepper, to taste
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper and add them to the skillet.
  3. Cook the chicken for about 6-7 minutes on each side until browned and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  5. Pour in the heavy cream, stirring well to combine with the garlic.
  6. Add the cherry tomatoes and Italian seasoning, stirring to incorporate. Let it simmer for 2-3 minutes.
  7. Add the fresh spinach to the skillet and cook until wilted, about 1-2 minutes.
  8. Return the cooked chicken to the skillet and coat it with the creamy sauce. Heat for an additional 2 minutes.
  9. Serve hot, garnished with grated Parmesan cheese.
