A moist and delicious cake made with a mix of fresh berries.


Ingredients

  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup melted butter
  • 3 eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large mixing bowl, combine the flour and sugar. Mix well until evenly distributed.
  3. Gently fold in the mixed berries, being careful not to break them apart.
  4. In another bowl, beat together ½ cup of melted butter and 3 eggs until well blended.
  5. Add the wet ingredients to the dry ingredients and mix until just combined. Do not over-mix.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Make sure not to over-mix the batter to keep the cake light and fluffy.
