- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup melted butter
- 3 eggs
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large mixing bowl, combine the flour and sugar. Mix well until evenly distributed.
- Gently fold in the mixed berries, being careful not to break them apart.
- In another bowl, beat together ½ cup of melted butter and 3 eggs until well blended.
- Add the wet ingredients to the dry ingredients and mix until just combined. Do not over-mix.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Make sure not to over-mix the batter to keep the cake light and fluffy.
- Feel free to substitute with other berries according to preference.
