A delicious no-bake keto-friendly éclair cake that is both low in carbs and easy to prepare.
Ingredients

- 1 package of sugar-free vanilla pudding mix
- 2 cups unsweetened almond milk
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 1 package of low-carb graham crackers
- ¼ cup unsweetened cocoa powder
- 2 tablespoons powdered erythritol
- A pinch of salt
Instructions
- In a mixing bowl, combine the sugar-free vanilla pudding mix and almond milk. Whisk until smooth and well blended. Let it sit for about 5 minutes to thicken.
- In a separate bowl, whip the heavy cream until soft peaks form. Gradually add the vanilla extract and continue whipping until stiff peaks form.
- Gently fold the whipped cream into the thickened pudding mixture. Be careful not to deflate the whipped cream.
- Prepare a baking dish by layering the bottom with low-carb graham crackers.
- Pour half of the pudding mixture over the graham crackers, spreading it evenly.
- Add another layer of graham crackers on top of the pudding mixture, followed by the remaining pudding.
- Finish off with one last layer of graham crackers on top.
- In a small bowl, mix the unsweetened cocoa powder, powdered erythritol, and a pinch of salt. Sprinkle this mixture evenly over the top layer of graham crackers.
- Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
- Once chilled, slice and serve your no-bake keto éclair cake. Enjoy!
