- 4 medium potatoes, peeled and cut into thick slices
- 4 chicken thighs, bone-in and skin-on
- 4 tablespoons Kikkoman soy sauce
Instructions
- Preheat the oven to 200°C (400°F).
- In a large ovenproof skillet, heat 2 tablespoons of oil over medium-high heat.
- Season the chicken thighs with salt and pepper. Once the oil is hot, sear the chicken thighs skin-side down until golden brown, about 5-7 minutes.
- Flip the chicken thighs and cook for an additional 3-4 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced potatoes and arrange them in a single layer.
- Pour the soy sauce over the potatoes and place the chicken thighs back on top.
- Add enough water to just cover the potatoes, then bring to a simmer.
- Transfer the skillet to the preheated oven and bake for 30-35 minutes or until the chicken is cooked through and potatoes are tender.
- Remove from the oven and let rest for 5 minutes before serving.
Notes
- For added flavor, consider marinating the chicken in soy sauce before cooking.
- Make sure not to overcrowd the skillet with potatoes for even cooking.
