A simple and delicious fried rice recipe inspired by Uncle Roger, perfect for any meal.
Ingredients

- 2 cups cooked jasmine rice (preferably day-old)
- 2 tablespoons vegetable oil
- 2 eggs, beaten
- 1 cup mixed vegetables (peas, carrots, and corn)
- 3 green onions, chopped
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the minced garlic to the pan and sauté for about 30 seconds until fragrant.
- Push the garlic to one side of the pan and pour in the beaten eggs. Scramble the eggs until just set.
- Add the mixed vegetables to the pan and stir-fry for about 2-3 minutes until they are tender.
- Add the cooked jasmine rice to the skillet, mixing everything together thoroughly.
- Pour the soy sauce and sesame oil over the rice, and season with salt and pepper to taste. Stir well to combine.
- Add the chopped green onions and stir-fry for an additional minute.
- Remove from heat and serve hot.
Notes
- Using day-old rice helps to prevent the rice from becoming mushy.
- Feel free to customize the vegetables according to your preference.
