Description

A simple and delicious fried rice recipe inspired by Uncle Roger, perfect for any meal.


Ingredients

  • 2 cups cooked jasmine rice (preferably day-old)
  • 2 tablespoons vegetable oil
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, and corn)
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic to the pan and sauté for about 30 seconds until fragrant.
  3. Push the garlic to one side of the pan and pour in the beaten eggs. Scramble the eggs until just set.
  4. Add the mixed vegetables to the pan and stir-fry for about 2-3 minutes until they are tender.
  5. Add the cooked jasmine rice to the skillet, mixing everything together thoroughly.
  6. Pour the soy sauce and sesame oil over the rice, and season with salt and pepper to taste. Stir well to combine.
  7. Add the chopped green onions and stir-fry for an additional minute.
  8. Remove from heat and serve hot.

Notes

  • Using day-old rice helps to prevent the rice from becoming mushy.
  • Feel free to customize the vegetables according to your preference.
