No-Fail Homemade Whole30 Mayonnaise

Description

A quick and easy recipe for homemade Whole30 mayonnaise that is creamy and flavorful.


Ingredients

  • 1 large egg
  • 1 cup light olive oil or avocado oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice or apple cider vinegar
  • Salt to taste

Instructions

  1. In a tall, narrow container (ideally a pint jar), add the egg, Dijon mustard, and lemon juice or vinegar.
  2. Pour in the light olive oil or avocado oil without stirring.
  3. Place an immersion blender into the container, making sure it rests at the bottom.
  4. Start blending slowly, moving the blender up and down until the mixture emulsifies and thickens. This usually takes about 30 seconds.
  5. Once the mayonnaise is thick, blend for an additional 10-15 seconds to ensure it is fully combined.
  6. Taste the mayonnaise and add salt as desired, blending briefly again to incorporate.
  7. Transfer the mayonnaise to an airtight container and refrigerate for up to a week.
