A quick and easy recipe for homemade Whole30 mayonnaise that is creamy and flavorful.

- 1 large egg
- 1 cup light olive oil or avocado oil
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice or apple cider vinegar
- Salt to taste
Instructions
- In a tall, narrow container (ideally a pint jar), add the egg, Dijon mustard, and lemon juice or vinegar.
- Pour in the light olive oil or avocado oil without stirring.
- Place an immersion blender into the container, making sure it rests at the bottom.
- Start blending slowly, moving the blender up and down until the mixture emulsifies and thickens. This usually takes about 30 seconds.
- Once the mayonnaise is thick, blend for an additional 10-15 seconds to ensure it is fully combined.
- Taste the mayonnaise and add salt as desired, blending briefly again to incorporate.
- Transfer the mayonnaise to an airtight container and refrigerate for up to a week.
