  • 4 hamburger buns (brioche recommended for richness)
  • Butterhead lettuce, for serving
  • 2 ripe tomatoes, sliced
  • 1/2 cup mayonnaise
  • Juice of 1/2 lemon
  • 3 Tbsp finely chopped chives
  • 1 tsp Dijon mustard (optional)
  • 1/2 tsp garlic powder (optional)
  • Hot sauce to taste (optional)

Instructions

  1. In a small bowl, combine the mayonnaise, lemon juice, and chopped chives. Add optional ingredients if desired. Stir thoroughly until well combined, then refrigerate until ready to use.
  2. Preheat oven to 400°F (200°C). Arrange bacon strips on a baking sheet lined with parchment paper. Bake for 12-15 minutes until crispy. Transfer to a paper towel-lined plate to drain excess grease.
  3. Divide ground beef into 4 equal portions (about 4 oz each) and gently form into patties slightly larger than your buns. Press your thumb into the center to create a slight dimple. Season generously with kosher salt and freshly ground black pepper on both sides. Allow patties to rest at room temperature for about 10 minutes.
  4. Heat a cast-iron skillet or grill to medium-high heat. Add patties and cook for 3-4 minutes per side for medium doneness. Add cheese during the last minute of cooking if desired and cover to melt. Remove and let rest for 2-3 minutes.
  5. Lightly butter the cut sides of the hamburger buns and toast in the same pan for 30-60 seconds until golden brown.
