Ingredients
Scale
- 1 lb ground beef (80/20 fat ratio for best flavor)
- Kosher salt, to taste
- Fresh ground black pepper, to taste
- 1 lb bacon slices, halved (thick-cut works best)
- 4 hamburger buns (brioche recommended for richness)
- Butterhead lettuce, for serving
- 2 ripe tomatoes, sliced
- 1/2 cup mayonnaise
- Juice of 1/2 lemon
- 3 Tbsp finely chopped chives
- 1 tsp Dijon mustard (optional)
- 1/2 tsp garlic powder (optional)
- Hot sauce to taste (optional)
Instructions
- In a small bowl, combine the mayonnaise, lemon juice, and chopped chives. Add optional ingredients if desired. Stir thoroughly until well combined, then refrigerate until ready to use.
- Preheat oven to 400°F (200°C). Arrange bacon strips on a baking sheet lined with parchment paper. Bake for 12-15 minutes until crispy. Transfer to a paper towel-lined plate to drain excess grease.
- Divide ground beef into 4 equal portions (about 4 oz each) and gently form into patties slightly larger than your buns. Press your thumb into the center to create a slight dimple. Season generously with kosher salt and freshly ground black pepper on both sides. Allow patties to rest at room temperature for about 10 minutes.
- Heat a cast-iron skillet or grill to medium-high heat. Add patties and cook for 3-4 minutes per side for medium doneness. Add cheese during the last minute of cooking if desired and cover to melt. Remove and let rest for 2-3 minutes.
- Lightly butter the cut sides of the hamburger buns and toast in the same pan for 30-60 seconds until golden brown.
- Spread the special sauce on both bun halves. Place lettuce on the bottom bun, followed by the burger patty. Add 3-4 half slices of crispy bacon in a crisscross pattern. Top with 1-2 tomato slices and the top bun. Secure with a toothpick if needed and serve immediately.
Notes
- Handle the ground beef as little as possible to keep burgers tender.
- Use the thumb indent trick to create a dimple that prevents burgers from puffing up.
- Thick-cut, high-quality bacon elevates any BLT Burger significantly.
- For best results, reheat patties in a 350°F oven for 8-10 minutes or in a skillet over medium heat.
