This Cake Mix Coffee Cake transforms a simple box of cake mix into an irresistible treat with a buttery crumb topping and moist, tender center. Perfect for lazy weekend mornings!

- 1 cup sour cream
- 4 large eggs
- ½ cup vegetable oil
- ¼ cup water
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ½ cup all-purpose flour
- ½ cup packed brown sugar
- 1 teaspoon ground cinnamon
- ¼ cup cold butter, cubed
- ½ cup chopped walnuts or pecans (optional)
- 1 cup powdered sugar
- 2–3 tablespoons milk
- ½ teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or spray with non-stick cooking spray.
- In a large bowl, combine the cake mix, sour cream, eggs, vegetable oil, water, vanilla extract, and cinnamon. Beat with an electric mixer on medium speed for about 2 minutes until smooth and well combined.
- In a medium bowl, whisk together the flour, brown sugar, and cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the chopped nuts if using.
- Pour half of the cake batter into the prepared baking pan, spreading it evenly. Sprinkle about one-third of the streusel mixture over the batter. Pour the remaining batter on top and top with remaining streusel mixture.
- Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean with a few moist crumbs.
- While the cake cools, make the glaze by whisking together powdered sugar, milk, and vanilla extract.
- Allow the cake to cool for at least 15 minutes before drizzling with the optional glaze. Serve warm or at room temperature.
