  • 1 tablespoon cooking fat (tallow, butter, or ghee)
  • 12 ounces ground beef (preferably 80/20 for optimal fat content)
  • 3 small eggs
  • Salt to taste (optional)
  • Optional: Ground black pepper
  • Optional: Bone broth for added moisture
  • Optional: A sprinkle of crushed pork rinds for texture

Instructions

  1. Heat your cooking fat of choice in a large skillet over medium-high heat until melted and hot.
  2. Add the ground beef to the hot skillet, breaking it up with a spatula into small pieces.
  3. Season with salt if desired and cook for about 3-4 minutes until it begins to brown.
  4. Using the back of a large spoon, create three indentations or ‘nests’ in the ground beef to cradle your eggs.
  5. Make sure these indentations are deep enough and wide enough to hold an egg without spilling over.
  6. Carefully crack an egg into each indentation in the meat.
  7. Season the eggs with additional salt if desired.
  8. Cover the skillet with a lid to help the eggs cook evenly.
  9. Cook for 3-5 minutes, depending on how you prefer your egg yolks (3 minutes for runny, 5 minutes for more set).
  10. Remove from heat once the egg whites are set but the yolks are still to your liking.
  11. Carefully transfer to plates and serve immediately.

Notes

  • Use room temperature eggs to help them cook more evenly and reduce the chance of cracking the yolks when adding them to the hot meat.
  • Don’t skip covering the skillet; the steam created helps cook the egg whites while keeping the yolks creamy.
