Low carb apple fritters that are delicious and easy to make.
Ingredients

- 2 large apples, peeled and sliced
- 1 cup almond flour
- 2 large eggs
- 1/2 cup erythritol or your preferred low-carb sweetener
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Coconut oil or butter for frying
Instructions
- In a large bowl, mix the almond flour, erythritol, cinnamon, and salt together.
- In a separate bowl, whisk the eggs and then add the vanilla extract.
- Combine the egg mixture with the almond flour mixture until well combined.
- Fold in the sliced apples gently until they are coated with the batter.
- Heat coconut oil or butter in a frying pan over medium heat.
- Drop spoonfuls of the apple batter into the pan, flattening slightly.
- Cook for about 3-4 minutes on each side, or until golden brown.
- Remove the Apfelküchlein from the pan and place them on paper towels to absorb excess oil.
- Serve warm, optionally topping with a sprinkle of additional cinnamon.
Notes
- Feel free to add nuts or raisins for extra texture.
- These can be served with sugar-free syrup if desired.
