Description

Low carb apple fritters that are delicious and easy to make.


Ingredients

  • 2 large apples, peeled and sliced
  • 1 cup almond flour
  • 2 large eggs
  • 1/2 cup erythritol or your preferred low-carb sweetener
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Coconut oil or butter for frying

Instructions

  1. In a large bowl, mix the almond flour, erythritol, cinnamon, and salt together.
  2. In a separate bowl, whisk the eggs and then add the vanilla extract.
  3. Combine the egg mixture with the almond flour mixture until well combined.
  4. Fold in the sliced apples gently until they are coated with the batter.
  5. Heat coconut oil or butter in a frying pan over medium heat.
  6. Drop spoonfuls of the apple batter into the pan, flattening slightly.
  7. Cook for about 3-4 minutes on each side, or until golden brown.
  8. Remove the Apfelküchlein from the pan and place them on paper towels to absorb excess oil.
  9. Serve warm, optionally topping with a sprinkle of additional cinnamon.

Notes

  • Feel free to add nuts or raisins for extra texture.
  • These can be served with sugar-free syrup if desired.
