Chicken Burgers – Homemade and Deliciously Juicy — perfect for quick weeknight dinners and easy meal prep. Makes 4 golden-crusted, herb-seasoned patties in just 25 minutes with 9 simple ingredients.

  • 1 pound extra-lean ground chicken
  • ½ cup Italian-seasoned bread crumbs, divided (use gluten-free bread crumbs for a gluten-free option)
  • ½ small onion, finely grated
  • 1 large egg
  • 2 cloves garlic, minced
  • Salt and ground black pepper to taste
  • 2 teaspoons olive oil
  • 4 burger buns (use lettuce wraps for a low-carb alternative)
  • Toppings of your choice: lettuce, tomato, avocado, cheese, etc.

Instructions

  1. In a large bowl, combine ground chicken, ¼ cup of the bread crumbs, grated onion, egg, minced garlic, salt, and pepper.
  2. Using clean hands, gently mix until just combined. Avoid overmixing to keep the chicken burgers tender.
  3. Divide the mixture into 4 equal portions and shape into patties about ½-inch thick.
  4. Place the remaining ¼ cup bread crumbs on a plate and carefully press both sides of each patty into the bread crumbs to lightly coat.
  5. Heat olive oil in a large skillet over medium heat.
  6. Add the chicken patties and cook for 5-6 minutes on each side, or until golden brown and the internal temperature reaches 165°F (74°C).
  7. If adding cheese, place a slice on each patty during the final minute of cooking and cover to melt.
  8. Toast the burger buns lightly if desired.
  9. Place each chicken burger patty on a bun and add your favorite toppings.
  10. Serve immediately while hot and juicy.

Notes

  • Refrigerator (cooked patties): Place cooled patties in a single layer inside an airtight glass container lined with a paper towel to absorb excess moisture. Store on the middle shelf of the fridge where the temperature stays most consistent. Cooked patties keep well for up to 3 days. Always ensure the internal temperature reaches 165 °F when reheating before serving.
  • Freezer (cooked or raw): Wrap each patty individually in plastic wrap, then place all wrapped patties inside a heavy-duty freezer bag. Squeeze out as much air as possible before sealing to prevent freezer burn. Label with the date and contents. Frozen chicken burger patties maintain peak quality for up to 2 months. Thaw overnight in the refrigerator for best texture.
  • Oven Reheat: Preheat the oven to 350 °F. Place refrigerated patties on a foil-lined baking sheet and cover loosely with another sheet of foil to trap steam and prevent drying. Check the internal temperature with a probe thermometer—165 °F is the safe minimum according to FDA food safety guidelines. Microwaving works best when you’re short on time.
  • Air Fryer Reheat: Preheat the air fryer to 360 °F. Place the patty in a single layer in the basket—do not stack. Reheat for 4 minutes, flipping once at the halfway mark. The circulating hot air restores a lightly crisp crust that rivals the original pan-sear. This is my personal favorite reheating method for maintaining juicy texture.
