Description

A delicious and hearty Chicken Burrito Bowl filled with rice, chicken, and fresh toppings.


Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup pico de gallo
  • 1 avocado, diced
  • 1 cup shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a skillet, heat a tablespoon of olive oil over medium heat.
  2. Add the diced chicken breast and season with cumin, chili powder, salt, and pepper.
  3. Cook the chicken for about 6-8 minutes until it’s no longer pink and cooked through.
  4. While the chicken is cooking, prepare the rice according to package instructions if not already cooked.
  5. Once the chicken is done, remove it from heat and set aside.
  6. In bowls, layer the cooked rice, then add the black beans and corn on top.
  7. Add the cooked chicken to each bowl.
  8. Top with pico de gallo, diced avocado, and shredded cheese.
  9. Serve immediately and enjoy your Chicken Burrito Bowls!
