A delicious and hearty Chicken Burrito Bowl filled with rice, chicken, and fresh toppings.
Ingredients

- 2 cups cooked rice
- 1 lb chicken breast, diced
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup pico de gallo
- 1 avocado, diced
- 1 cup shredded cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a skillet, heat a tablespoon of olive oil over medium heat.
- Add the diced chicken breast and season with cumin, chili powder, salt, and pepper.
- Cook the chicken for about 6-8 minutes until it’s no longer pink and cooked through.
- While the chicken is cooking, prepare the rice according to package instructions if not already cooked.
- Once the chicken is done, remove it from heat and set aside.
- In bowls, layer the cooked rice, then add the black beans and corn on top.
- Add the cooked chicken to each bowl.
- Top with pico de gallo, diced avocado, and shredded cheese.
- Serve immediately and enjoy your Chicken Burrito Bowls!
