  • 1 cup brown sugar (packed)
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla essence
  • 2 cups plain flour
  • 1 tablespoon baking powder
  • 1/2 cup cocoa powder (sifted)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, beat the eggs and brown sugar together until well combined and slightly fluffy.
  3. Add the vegetable oil and vanilla essence to the egg mixture and stir until fully incorporated.
  4. In a separate bowl, sift together the plain flour, baking powder, and cocoa powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. If the dough seems too sticky, refrigerate for 15-20 minutes.
  6. Take tablespoon-sized portions of dough and roll them into balls.
  7. Place the balls on the prepared baking sheets, leaving about 2 inches between each one.
  8. Use a fork to gently flatten each ball, creating a classic biscuit pattern on top.
  9. Bake in the preheated oven for 10-12 minutes. The biscuits should be set around the edges but still slightly soft in the center.
  10. Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
