Description

A low-carb, sugar-free version of the classic Ferrero Rocher using almond flour and erythritol.


Ingredients

  • 1 cup unsweetened almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup powdered erythritol
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup hazelnuts, whole
  • 1/2 cup sugar-free dark chocolate, chopped
  • 1 tablespoon coconut oil (for chocolate coating)

Instructions

  1. In a large mixing bowl, combine the almond flour, cocoa powder, powdered erythritol, melted coconut oil, vanilla extract, and salt. Mix until well blended.
  2. Form the mixture into small balls, about the size of a teaspoon. Press a hazelnut into the center of each ball and reshape the ball around the nut.
  3. Freeze the formed balls on a baking sheet for about 30 minutes to firm up.
  4. In a microwave-safe bowl, melt the sugar-free dark chocolate and 1 tablespoon of coconut oil together in 30-second intervals, stirring in between until smooth.
  5. Dip each chilled ball into the melted chocolate, ensuring it’s fully coated. Place on a parchment-lined baking sheet.
  6. Drizzle any remaining chocolate over the top of the coated balls for extra decoration.
  7. Let the chocolate harden at room temperature or place it in the refrigerator for quicker solidification.
