Description
A low-carb, sugar-free version of the classic Ferrero Rocher using almond flour and erythritol.
Ingredients

- 1 cup unsweetened almond flour
- 1/2 cup unsweetened cocoa powder
- 1/4 cup powdered erythritol
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup hazelnuts, whole
- 1/2 cup sugar-free dark chocolate, chopped
- 1 tablespoon coconut oil (for chocolate coating)
Instructions
- In a large mixing bowl, combine the almond flour, cocoa powder, powdered erythritol, melted coconut oil, vanilla extract, and salt. Mix until well blended.
- Form the mixture into small balls, about the size of a teaspoon. Press a hazelnut into the center of each ball and reshape the ball around the nut.
- Freeze the formed balls on a baking sheet for about 30 minutes to firm up.
- In a microwave-safe bowl, melt the sugar-free dark chocolate and 1 tablespoon of coconut oil together in 30-second intervals, stirring in between until smooth.
- Dip each chilled ball into the melted chocolate, ensuring it’s fully coated. Place on a parchment-lined baking sheet.
- Drizzle any remaining chocolate over the top of the coated balls for extra decoration.
- Let the chocolate harden at room temperature or place it in the refrigerator for quicker solidification.

Notes
- Make sure to store the chocolate-covered balls in an airtight container in the fridge.
- You can adjust the sweetness by adding more or less erythritol according to your taste.
