- 2 cups cottage cheese
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 tablespoon lemon juice
- 1 cup sour cream
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
- In a blender or food processor, blend the cottage cheese until smooth.
- Add the granulated sugar, vanilla extract, and lemon juice to the blended cottage cheese. Blend until well combined.
- Add the eggs one at a time, blending well after each addition.
- Mix in the sour cream until smooth.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry mixture to the wet ingredients, blending until just combined.
- Pour the batter into the prepared springform pan.
- Bake in the preheated oven for 45-50 minutes, or until the center is set and a toothpick inserted into the center comes out clean.
- Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
- Remove from the oven and refrigerate for at least 4 hours, or overnight for best results.
- Serve chilled and enjoy!
