Description
Creamy Garlic Mashed Cauliflower is a delightful low-carb side dish that is smooth and flavorful, incorporating garlic and heavy cream for a rich taste.
Ingredients
Scale
- 1 medium head of cauliflower, cut into florets
- 4 cloves of garlic, minced
- 1/4 cup heavy cream
Instructions
- Fill a large pot with water and bring it to a boil. Add the cauliflower florets and cook for about 10-12 minutes, or until fork-tender.
- While the cauliflower is cooking, heat a small skillet over medium heat. Add the minced garlic and sauté for 2-3 minutes, or until fragrant and lightly golden.
- Drain the cooked cauliflower and transfer it to a food processor. Add the sautéed garlic and heavy cream.
- Blend the mixture until smooth and creamy. If the mixture is too thick, add a little more heavy cream until you reach your desired consistency.
- Season with salt and pepper to taste, then pulse again to combine.
- Serve immediately, garnishing with fresh herbs or additional garlic, if desired.
Notes
- For additional flavor, consider adding Parmesan cheese or herbs on top before serving.
- This dish is a great substitute for traditional mashed potatoes.
