- 1 pound Italian sausage, ground
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups kale, chopped
- 1 can (15 oz) diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot or Dutch oven, cook the ground Italian sausage over medium heat until browned, breaking it apart with a spatula as it cooks. Drain excess fat if necessary.
- Add the diced onion to the pot and sauté for about 3 minutes until softened. Stir in the minced garlic and cook for an additional minute.
- Pour in the chicken broth and bring the mixture to a boil.
- Add the diced tomatoes (with juices), Italian seasoning, salt, and pepper to the pot. Stir well.
- Lower the heat and let the soup simmer for 10 minutes to blend the flavors.
- Stir in the chopped kale and let it cook for another 5 minutes, until the kale is wilted.
- Slowly add the heavy cream and grated Parmesan cheese, stirring continuously until the cheese is melted and the soup is creamy.
- Taste and adjust seasoning if necessary before serving.

- This soup can be refrigerated for up to 3 days.
- Reheat on the stove over low heat, adding additional broth if needed.
