This Creamy Tuscan Chicken delivers a restaurant-quality flavor with minimal effort. Tender chicken is bathed in a silky, parmesan-infused sauce, studded with vibrant spinach and sun-dried tomatoes, all ready in just 30 minutes.

- 4 boneless, skinless chicken breasts (4–6 ounces each)
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons all-purpose flour (or almond flour for low-carb option)
- 2 tablespoons olive oil
- ¾ cup chicken broth
- ½ cup heavy cream
- ½ cup half and half or whole milk
- 1 tablespoon Italian seasoning
- ½ cup freshly grated parmesan cheese
- 2 cups baby spinach, loosely packed
- ½ cup sun-dried tomatoes packed in oil, drained and chopped
Instructions
- Pat chicken breasts dry with paper towels. Season both sides with salt and pepper.
- Place the flour on a shallow plate and dredge each chicken breast lightly, shaking off any excess.
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Add chicken breasts to the hot skillet and cook for 5-6 minutes on each side until golden brown and cooked through. Transfer chicken to a plate and cover loosely with foil to keep warm.
- In the same skillet, add chicken broth and scrape up any browned bits from the bottom of the pan.
- Lower heat to medium and add heavy cream, half and half, and Italian seasoning. Simmer for 2-3 minutes.
- Gradually whisk in parmesan cheese until melted and sauce is smooth.
- Add sun-dried tomatoes and simmer for another 2 minutes, allowing flavors to blend.
- Add spinach to the sauce and stir until wilted, about 1 minute.
- Return chicken to the skillet, spooning sauce over the top. Simmer together for 2-3 minutes until chicken is heated through and flavors have melded.
- Taste and adjust seasonings if needed.
Notes
- For a dairy-free version, use coconut cream and nutritional yeast instead of heavy cream and parmesan.
- Substitute chicken thighs for more flavor and moisture.
- Add mushrooms for a variation.
