  • 4 boneless, skinless chicken breasts (46 ounces each)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons all-purpose flour (or almond flour for low-carb option)
  • 2 tablespoons olive oil
  • ¾ cup chicken broth
  • ½ cup heavy cream
  • ½ cup half and half or whole milk
  • 1 tablespoon Italian seasoning
  • ½ cup freshly grated parmesan cheese
  • 2 cups baby spinach, loosely packed
  • ½ cup sun-dried tomatoes packed in oil, drained and chopped

Instructions

  1. Pat chicken breasts dry with paper towels. Season both sides with salt and pepper.
  2. Place the flour on a shallow plate and dredge each chicken breast lightly, shaking off any excess.
  3. Heat olive oil in a large skillet over medium-high heat until shimmering.
  4. Add chicken breasts to the hot skillet and cook for 5-6 minutes on each side until golden brown and cooked through. Transfer chicken to a plate and cover loosely with foil to keep warm.
  5. In the same skillet, add chicken broth and scrape up any browned bits from the bottom of the pan.
  6. Lower heat to medium and add heavy cream, half and half, and Italian seasoning. Simmer for 2-3 minutes.
  7. Gradually whisk in parmesan cheese until melted and sauce is smooth.
  8. Add sun-dried tomatoes and simmer for another 2 minutes, allowing flavors to blend.
  9. Add spinach to the sauce and stir until wilted, about 1 minute.
  10. Return chicken to the skillet, spooning sauce over the top. Simmer together for 2-3 minutes until chicken is heated through and flavors have melded.
  11. Taste and adjust seasonings if needed.

  • For a dairy-free version, use coconut cream and nutritional yeast instead of heavy cream and parmesan.
