- 1 bell pepper, sliced
- 1 small onion, diced
- 2 cups orzo pasta
- 3 cups chicken broth
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
- Fresh parsley for garnish
Instructions
- In a large skillet, heat a drizzle of olive oil over medium heat. Add the sliced Italian sausage and cook until browned, about 5-7 minutes.
- Remove the sausage from the skillet and set aside, leaving the drippings in the pan.
- In the same skillet, add the diced onion and sliced bell pepper. Sauté for about 5 minutes until softened.
- Add minced garlic and Italian seasoning; cook for an additional 1-2 minutes until fragrant.
- Stir in the orzo pasta, allowing it to toast lightly for about 2 minutes.
- Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for about 10-12 minutes, stirring occasionally, until the orzo is tender and liquid is absorbed.
- Add the cooked sausage back to the skillet, mixing everything thoroughly. Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.

- For a spicier dish, use spicy Italian sausage.
- Feel free to add other vegetables like zucchini or mushrooms.
