Instructions

  1. In a large skillet, heat a drizzle of olive oil over medium heat. Add the sliced Italian sausage and cook until browned, about 5-7 minutes.
  2. Remove the sausage from the skillet and set aside, leaving the drippings in the pan.
  3. In the same skillet, add the diced onion and sliced bell pepper. Sauté for about 5 minutes until softened.
  4. Add minced garlic and Italian seasoning; cook for an additional 1-2 minutes until fragrant.
  5. Stir in the orzo pasta, allowing it to toast lightly for about 2 minutes.
  6. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for about 10-12 minutes, stirring occasionally, until the orzo is tender and liquid is absorbed.
  7. Add the cooked sausage back to the skillet, mixing everything thoroughly. Season with salt and pepper to taste.
  8. Garnish with fresh parsley before serving.
