Description

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can (15 ounces) white beans, drained and rinsed
  • 1 can (4 ounces) diced green chilies
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Turn the Instant Pot to the sauté mode. Add a small amount of olive oil.
  2. Once the oil is hot, add the diced onion and bell peppers. Sauté for 3-4 minutes until softened.
  3. Add minced garlic and sauté for an additional 1 minute until fragrant.
  4. Place the chicken breasts in the pot and season with cumin, chili powder, salt, and pepper.
  5. Pour in the chicken broth and add the white beans and green chilies. Stir to combine.
  6. Secure the lid on the Instant Pot and set to manual high pressure for 10 minutes.
  7. After the cooking time is complete, allow a natural pressure release for 10 minutes, then carefully quick release any remaining pressure.
  8. Remove the chicken and shred using two forks. Return the shredded chicken to the chili and stir.
  9. Taste and adjust seasoning if needed. Serve hot, garnished with cilantro, avocado, or cheese if desired.
