Description

Delicious Keto Sausage Lasagna Roll Ups made with zucchini instead of traditional pasta.


Ingredients

  • 8 large zucchini (sliced into thin sheets)
  • 1 lb Italian sausage (crumbled)
  • 2 cups ricotta cheese
  • 1 ½ cups shredded mozzarella cheese
  • 1 egg
  • 2 cups marinara sauce (sugar-free)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil (for garnish, optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the crumbled Italian sausage until browned. Drain excess fat and set aside.
  3. In a mixing bowl, combine the ricotta cheese, 1 cup of mozzarella cheese, egg, Italian seasoning, salt, and pepper. Mix until smooth.
  4. Lay out the zucchini slices on a clean surface. Spread a spoonful of the ricotta mixture onto each zucchini slice and top with a small amount of sausage.
  5. Roll each zucchini slice tightly and place it seam-side down in a baking dish.
  6. Pour marinara sauce evenly over the rolled zucchini lasagna.
  7. Sprinkle the remaining mozzarella cheese on top.
  8. Cover the dish with aluminum foil and bake for 25 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbling and golden.
  10. Garnish with fresh basil if desired, then slice and serve.
