Delicious Keto Sausage Lasagna Roll Ups made with zucchini instead of traditional pasta.

- 8 large zucchini (sliced into thin sheets)
- 1 lb Italian sausage (crumbled)
- 2 cups ricotta cheese
- 1 ½ cups shredded mozzarella cheese
- 1 egg
- 2 cups marinara sauce (sugar-free)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil (for garnish, optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, cook the crumbled Italian sausage until browned. Drain excess fat and set aside.
- In a mixing bowl, combine the ricotta cheese, 1 cup of mozzarella cheese, egg, Italian seasoning, salt, and pepper. Mix until smooth.
- Lay out the zucchini slices on a clean surface. Spread a spoonful of the ricotta mixture onto each zucchini slice and top with a small amount of sausage.
- Roll each zucchini slice tightly and place it seam-side down in a baking dish.
- Pour marinara sauce evenly over the rolled zucchini lasagna.
- Sprinkle the remaining mozzarella cheese on top.
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbling and golden.
- Garnish with fresh basil if desired, then slice and serve.

- Ensure the zucchini slices are thin for easy rolling.
- You can vary the cheese types based on preference.
