- 2 pounds lamb breast, trimmed
- 2 tablespoons olive oil
- 4 cloves garlic, minced
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium-high heat.
- Season the lamb breast generously with salt and pepper on both sides.
- Sear the lamb breast in the skillet for about 5 minutes on each side, or until it has a nice browned crust.
- Remove the lamb from the skillet and place it in a roasting pan.
- Spread the minced garlic evenly over the top of the lamb.
- Cover the pan with aluminum foil and roast in the oven for 1.5 hours.
- After 1.5 hours, remove the foil and roast for an additional 30 minutes to achieve a crispy top.
- Let the lamb rest for 10 minutes before slicing.
- Serve warm with your choice of sides.
