Ingredients

  • 2 pounds lamb breast, trimmed
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Season the lamb breast generously with salt and pepper on both sides.
  4. Sear the lamb breast in the skillet for about 5 minutes on each side, or until it has a nice browned crust.
  5. Remove the lamb from the skillet and place it in a roasting pan.
  6. Spread the minced garlic evenly over the top of the lamb.
  7. Cover the pan with aluminum foil and roast in the oven for 1.5 hours.
  8. After 1.5 hours, remove the foil and roast for an additional 30 minutes to achieve a crispy top.
  9. Let the lamb rest for 10 minutes before slicing.
  10. Serve warm with your choice of sides.
