- 500g chicken breast, diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups chicken broth
- 2 cups cauliflower florets
- 1 cup spinach
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic to the pot, sautéing until the onion becomes translucent.
- Add the diced chicken breast to the pot, cooking until the chicken is browned on all sides.
- Pour in the chicken broth and bring to a simmer.
- Add the cauliflower florets, dried thyme, salt, and pepper to the pot.
- Simmer for 15-20 minutes, or until the cauliflower is tender.
- Stir in the spinach and cook for an additional 5 minutes, until wilted.
- Adjust seasoning as necessary before serving.
