  • 1/2 teaspoon chili powder (optional)
  • 1/2 cup water or as needed
  • Oil for frying

Instructions

  1. In a large mixing bowl, combine the all-purpose flour, rice flour, salt, black pepper, and chili powder.
  2. Add the corn kernels, chopped green onions, and cilantro to the dry mixture.
  3. Gradually add water to the bowl, mixing until a thick batter forms. Ensure the batter is not too runny.
  4. Heat oil in a deep frying pan over medium heat. The oil should be about 1 inch deep.
  5. Once the oil is hot, scoop a tablespoon of the batter and carefully drop it into the oil. Repeat for several fritters, ensuring they do not overcrowd the pan.
  6. Fry the fritters for about 3-4 minutes on each side, or until they turn golden brown and crispy.
  7. Remove the fritters from the oil and drain them on paper towels to remove excess oil.
