- 1 cup cottage cheese
- 4 large eggs
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped spinach
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it lightly or using silicone liners.
- In a large mixing bowl, combine the cottage cheese, eggs, salt, black pepper, garlic powder, and onion powder. Blend until smooth.
- Fold in the shredded cheddar cheese and chopped spinach until evenly distributed.
- Pour the mixture evenly into the prepared muffin tin, filling each cup about three-quarters full.
- Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and lightly golden on top.
- Remove from the oven and let them cool for a few minutes before gently removing the bites from the tin.
- Serve warm or let them cool completely before storing in an airtight container in the refrigerator.
