Ingredients

  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped spinach
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it lightly or using silicone liners.
  2. In a large mixing bowl, combine the cottage cheese, eggs, salt, black pepper, garlic powder, and onion powder. Blend until smooth.
  3. Fold in the shredded cheddar cheese and chopped spinach until evenly distributed.
  4. Pour the mixture evenly into the prepared muffin tin, filling each cup about three-quarters full.
  5. Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and lightly golden on top.
  6. Remove from the oven and let them cool for a few minutes before gently removing the bites from the tin.
  7. Serve warm or let them cool completely before storing in an airtight container in the refrigerator.
