- 1 lb boneless, skinless chicken thighs, diced
- 4 tablespoons unsalted butter
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 can (14 oz) crushed tomatoes
- 1 cup heavy cream
- 2 teaspoons garam masala
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Melt 2 tablespoons of butter in a large skillet over medium heat.
- Add the diced chicken thighs, season with salt and pepper, and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of butter and the chopped onion. Sauté until soft and translucent, about 4-5 minutes.
- Stir in minced garlic and ginger, cooking for another minute until fragrant.
- Pour in crushed tomatoes, garam masala, cumin, and paprika. Stir well and let simmer for 5 minutes.
- Reduce heat to low and add heavy cream, stirring until fully combined and heated through.
- Return chicken to the skillet and simmer for an additional 5-7 minutes.
- Serve hot, garnished with fresh cilantro.
