- 2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup powdered erythritol
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1/2 cup sugar-free fruit filling
Instructions
- Preheat the oven to 350°F (175°C) and line a baking pan with parchment paper.
- In a mixing bowl, combine almond flour, coconut flour, powdered erythritol, and salt. Mix well.
- Add softened butter, vanilla extract, and the egg to the dry ingredients. Mix until a dough forms.
- Divide the dough into two equal parts, wrapping one part in plastic wrap and refrigerating.
- Roll out the first part of dough between two pieces of parchment paper until it’s about 1/4 inch thick.
- Cut the rolled-out dough into rectangles, then transfer them to the prepared baking pan.
- Place about a tablespoon of sugar-free fruit filling in the center of half of the rectangles.
- Take the second part of the dough from the refrigerator and roll it out as well, then cut into rectangles.
- Place the second set of rectangles over the filling-covered ones, pressing the edges to seal.
- Bake for 15-20 minutes or until golden. Let them cool before serving.

- You can use any sugar-free fruit filling of your choice.
