Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup powdered erythritol
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1/2 cup sugar-free fruit filling

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. In a mixing bowl, combine almond flour, coconut flour, powdered erythritol, and salt. Mix well.
  3. Add softened butter, vanilla extract, and the egg to the dry ingredients. Mix until a dough forms.
  4. Divide the dough into two equal parts, wrapping one part in plastic wrap and refrigerating.
  5. Roll out the first part of dough between two pieces of parchment paper until it’s about 1/4 inch thick.
  6. Cut the rolled-out dough into rectangles, then transfer them to the prepared baking pan.
  7. Place about a tablespoon of sugar-free fruit filling in the center of half of the rectangles.
  8. Take the second part of the dough from the refrigerator and roll it out as well, then cut into rectangles.
  9. Place the second set of rectangles over the filling-covered ones, pressing the edges to seal.
  10. Bake for 15-20 minutes or until golden. Let them cool before serving.
