Description
A sweet and fluffy marshmallow treat made with honey, egg whites, and vanilla.
Ingredients

- 1 cup honey
- 1/2 cup water
- 2 large egg whites
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- In a small saucepan, combine the honey and water. Heat over medium heat, stirring until the honey is dissolved.
- Use a candy thermometer to monitor the temperature. Allow the honey mixture to cook without stirring until it reaches 240°F (115°C), known as the soft-ball stage.
- While the honey mixture is cooking, place the egg whites and salt in a mixing bowl. Beat with an electric mixer on medium speed until soft peaks form.
- Once the honey mixture reaches 240°F, remove it from the heat. With the mixer on low, carefully drizzle the hot honey mixture into the beaten egg whites.
- Gradually increase the speed of the mixer to high and beat until the mixture is thick and glossy, about 5 to 7 minutes. Add in the vanilla extract and mix until well incorporated.
- Transfer the marshmallow fluff to an airtight container and let it cool. Store in the refrigerator for up to three weeks.
Notes
- Ensure the egg whites do not contain any yolk for best results.
- This fluff can be used as a topping for desserts or eaten on its own.
