Honey Marshmallow Fluff

  • Total Time: 25
  • Yield: 2 cups 1x
  • Diet: Vegetarian

Description

A sweet and fluffy marshmallow treat made with honey, egg whites, and vanilla.

Ingredients

Scale
  • 1 cup honey
  • 1/2 cup water
  • 2 large egg whites
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. In a small saucepan, combine the honey and water. Heat over medium heat, stirring until the honey is dissolved.
  2. Use a candy thermometer to monitor the temperature. Allow the honey mixture to cook without stirring until it reaches 240°F (115°C), known as the soft-ball stage.
  3. While the honey mixture is cooking, place the egg whites and salt in a mixing bowl. Beat with an electric mixer on medium speed until soft peaks form.
  4. Once the honey mixture reaches 240°F, remove it from the heat. With the mixer on low, carefully drizzle the hot honey mixture into the beaten egg whites.
  5. Gradually increase the speed of the mixer to high and beat until the mixture is thick and glossy, about 5 to 7 minutes. Add in the vanilla extract and mix until well incorporated.
  6. Transfer the marshmallow fluff to an airtight container and let it cool. Store in the refrigerator for up to three weeks.

Notes

  • Ensure the egg whites do not contain any yolk for best results.
  • This fluff can be used as a topping for desserts or eaten on its own.
