- 1/2 cup sweetener of choice (like erythritol or stevia)
- 1 large egg
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the natural peanut butter and sweetener until well mixed.
- Add the large egg to the mixture and stir until all ingredients are fully combined.
- Scoop tablespoon-sized portions of the dough and place them onto a parchment-lined baking sheet, spaced at least 2 inches apart.
- Flatten each cookie slightly with a fork to create a crisscross pattern.
- Bake in the preheated oven for 10-12 minutes or until the edges start to brown.
- Remove from the oven and allow to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
Notes
