- 2 medium sweet potatoes, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil for cooking
- Fresh parsley for garnish (optional)
Instructions
- Heat a large skillet over medium heat and add a drizzle of olive oil.
- Add the chopped onion and diced bell pepper to the skillet. Sauté for about 5 minutes or until they start to soften.
- Add the minced garlic to the skillet and cook for an additional 1 minute, stirring frequently.
- Increase the heat to medium-high and add the ground turkey. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Once the turkey is cooked through, remove it from the skillet and set aside.
- In the same skillet, add the diced sweet potatoes, paprika, cumin, salt, and pepper. Stir to combine and cook for about 10-15 minutes, until the sweet potatoes are tender.
- Return the cooked ground turkey to the skillet with the sweet potatoes. Mix well to combine and heat through for about 2-3 minutes.
- Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.
