  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat a large skillet over medium heat and add a drizzle of olive oil.
  2. Add the chopped onion and diced bell pepper to the skillet. Sauté for about 5 minutes or until they start to soften.
  3. Add the minced garlic to the skillet and cook for an additional 1 minute, stirring frequently.
  4. Increase the heat to medium-high and add the ground turkey. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  5. Once the turkey is cooked through, remove it from the skillet and set aside.
  6. In the same skillet, add the diced sweet potatoes, paprika, cumin, salt, and pepper. Stir to combine and cook for about 10-15 minutes, until the sweet potatoes are tender.
  7. Return the cooked ground turkey to the skillet with the sweet potatoes. Mix well to combine and heat through for about 2-3 minutes.
  8. Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.
