Easy Keto Flan is a delightful treat suitable for your low-carb lifestyle.

- 1 cup almond milk
- 1/2 cup erythritol or your preferred keto sweetener
- 4 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium saucepan, combine the almond milk, erythritol, and vanilla extract over medium heat. Stir continuously until the sweetener is fully dissolved. Do not let it boil.
- In a separate bowl, whisk the eggs until smooth. Slowly pour the warm almond milk mixture into the eggs, whisking constantly to prevent the eggs from cooking.
- Once combined, pour the mixture into individual ramekins or a large flan mold.
- Create a water bath by placing the ramekins in a baking dish and filling the dish with hot water until it reaches halfway up the sides of the ramekins.
- Bake in the preheated oven for 30-35 minutes, or until the flan is set but still slightly wobbly in the center.
- Remove from the oven and let it cool at room temperature for about 20 minutes. Then refrigerate for at least 2 hours before serving.
- To serve, run a knife around the edge of each ramekin and invert onto a plate.
Notes
- Ensure the sweetener is fully dissolved before combining with the eggs.
- For best results, refrigerate the flan for several hours before serving.
