Ingredients

  • 2 cups almond flour
  • 1/2 cup erythritol sweetener
  • 1/4 cup lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the almond flour and erythritol sweetener.
  3. Add the lemon juice to the dry ingredients and mix well until a dough forms.
  4. If desired, add lemon zest for extra flavor, and mix again.
  5. Scoop out tablespoon-sized amounts of dough and roll them into balls.
  6. Place the balls onto the prepared baking sheet, spacing them 2 inches apart.
  7. Flatten each cookie slightly with the palm of your hand.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges turn golden.
  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
