- 2 cups almond flour
- 1/2 cup erythritol sweetener
- 1/4 cup lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the almond flour and erythritol sweetener.
- Add the lemon juice to the dry ingredients and mix well until a dough forms.
- If desired, add lemon zest for extra flavor, and mix again.
- Scoop out tablespoon-sized amounts of dough and roll them into balls.
- Place the balls onto the prepared baking sheet, spacing them 2 inches apart.
- Flatten each cookie slightly with the palm of your hand.
- Bake in the preheated oven for 10-12 minutes, or until the edges turn golden.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
