Ingredients

  • 8 ounces of shirataki noodles
  • 1 pound of shrimp, peeled and deveined
  • 2 tablespoons of soy sauce (or coconut aminos for a soy-free option)
  • 1 tablespoon of sesame oil
  • 1 cup of shredded cabbage
  • 1 bell pepper, sliced
  • 2 green onions, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of ginger, minced
  • Salt and pepper to taste

Instructions

  1. Rinse the shirataki noodles under cold water and drain them well.
  2. In a large skillet or wok, heat the sesame oil over medium heat.
  3. Add the minced garlic and ginger, sauté for about 30 seconds until fragrant.
  4. Add the shrimp to the skillet, cooking for about 2-3 minutes until they turn pink.
  5. Stir in the shredded cabbage and bell pepper, cooking for an additional 3-4 minutes until they start to soften.
  6. Add the shirataki noodles to the skillet and mix well with the shrimp and vegetables.
  7. Pour the soy sauce (or coconut aminos) over the mixture and stir to combine.
  8. Season with salt and pepper to taste and cook for another 2-3 minutes until everything is heated through.
  9. Remove from heat and garnish with chopped green onions before serving.
