Description

A hearty and healthy one-skillet dish featuring layers of sweet potatoes, seasoned ground meat, and creamy yogurt topped with mozzarella, perfect for a comforting family dinner.


Ingredients

  • 2 large sweet potatoes, peeled and sliced
  • 1 pound ground beef or lamb
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon cinnamon
  • 1 cup Greek yogurt
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
  2. Add the minced garlic to the skillet and sauté for an additional minute until fragrant.
  3. Increase the heat to medium-high and add the ground beef or lamb. Cook until browned, breaking it apart with a spatula, about 6-8 minutes.
  4. Stir in the crushed tomatoes, oregano, cinnamon, salt, and pepper. Bring to a simmer, then reduce the heat and let it cook for 10 minutes.
  5. While the meat mixture simmers, bring a separate pot of water to a boil. Add the sweet potato slices and cook until tender, about 8-10 minutes.
  6. Drain the sweet potatoes and layer half of them on top of the meat mixture in the skillet.
  7. Spread half of the Greek yogurt over the sweet potato layer, then add the remaining sweet potato slices on top.
  8. Finally, spread the rest of the Greek yogurt and sprinkle the shredded mozzarella cheese on top.
  9. Cover the skillet with a lid and cook on low heat for 10-15 minutes, until the cheese is melted and bubbly.
  10. Remove the skillet from the heat, garnish with fresh parsley, and serve hot.

Notes

  • For a vegetarian version, substitute ground meat with lentils or mushrooms.
  • Feel free to add other vegetables or spices to enhance the flavor.
