Instructions
- In a medium bowl, whisk together the egg whites, salt, and pepper until well combined.
- Heat a non-stick skillet over medium heat and lightly coat with cooking spray or olive oil.
- Pour approximately 1/4 cup of the egg mixture into the skillet, tilting the pan to spread it evenly.
- Cook for about 1-2 minutes until the edges begin to set and the bottom is lightly golden.
- Carefully flip the tortilla using a spatula and cook for an additional 1 minute until fully cooked.
- Transfer the tortilla to a plate and repeat the process with the remaining egg mixture, stacking the tortillas as you go.
