- 2 cups almond flour
- 1/4 cup coconut flour
- 1 tablespoon baking powder
- 1/4 teaspoon sea salt
- 1/4 cup sugar-free sweetener
- 1/2 cup unsweetened almond milk
- 1/4 cup melted coconut oil
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 tablespoons ground cinnamon
- 1/4 cup additional sugar-free sweetener (for filling)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a large bowl, combine almond flour, coconut flour, baking powder, sea salt, and sugar-free sweetener. Mix well.
- In a separate bowl, whisk together almond milk, melted coconut oil, eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms.
- Lightly flour a clean surface with almond flour and roll out the dough into a rectangle about 1/4 inch thick.
- Sprinkle ground cinnamon and additional sugar-free sweetener evenly over the rolled-out dough.
- Carefully roll the dough from one long side to the other, creating a log shape.
- Slice the log into 12 equal pieces and place them in the prepared baking dish.
- Bake the cinnamon rolls in the preheated oven for 20-25 minutes, or until golden brown.
- Let the rolls cool for a few minutes before serving.
Notes
- Ensure the almond flour is finely ground for the best texture.
- These rolls are best served fresh but can be stored in an airtight container for a couple of days.
