Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon sea salt
  • 1/4 cup sugar-free sweetener
  • 1/2 cup unsweetened almond milk
  • 1/4 cup melted coconut oil
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 tablespoons ground cinnamon
  • 1/4 cup additional sugar-free sweetener (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a large bowl, combine almond flour, coconut flour, baking powder, sea salt, and sugar-free sweetener. Mix well.
  3. In a separate bowl, whisk together almond milk, melted coconut oil, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  5. Lightly flour a clean surface with almond flour and roll out the dough into a rectangle about 1/4 inch thick.
  6. Sprinkle ground cinnamon and additional sugar-free sweetener evenly over the rolled-out dough.
  7. Carefully roll the dough from one long side to the other, creating a log shape.
  8. Slice the log into 12 equal pieces and place them in the prepared baking dish.
  9. Bake the cinnamon rolls in the preheated oven for 20-25 minutes, or until golden brown.
  10. Let the rolls cool for a few minutes before serving.
