Irresistible Cucumber Smoked Salmon: 15-Min Bites — a no-cook breakfast appetizer perfect for brunch entertaining and quick morning meals. Makes 24 crisp cucumber rounds topped with whipped dill cream cheese and smoked salmon in just 15 minutes with 8 simple ingredients.
Ingredients
- Fresh Cucumbers: 2 medium, firm, unblemished
- Smoked Salmon: 4 oz, high-quality, thinly sliced
- Cream Cheese: 4 oz, full-fat, softened
- Fresh Dill: 2 tablespoons, chopped, plus extra for garnish
- Lemon Juice: 1 tablespoon, freshly squeezed
- Capers: 1 tablespoon, drained (optional)
- Salt: to taste

Instructions
- Wash cucumbers thoroughly under cold water. Slice them into ¼-inch thick rounds using a sharp knife.
- In a medium bowl, combine softened cream cheese, chopped fresh dill, and fresh lemon juice. Mix until smooth and creamy. Season with salt and black pepper to taste.
- Take each cucumber slice and spread a generous dollop of the cream cheese mixture on top.
- Place pieces of smoked salmon on top of each cucumber bite, arranging them attractively.
- Sprinkle capers over each bite, if using. Garnish with a small sprig of fresh dill for extra flair.
- Arrange the cucumber smoked salmon bites on a platter. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
Notes
- Fridge (assembled bites): Place assembled cucumber salmon bites in a single layer inside an airtight container lined with a paper towel. Store in the refrigerator at 35–38°F for up to 1 day. The paper towel absorbs condensation that would otherwise make the cucumber rounds slippery. After 12 hours, the cream cheese layer may soften slightly, so consume sooner for the best textural contrast between crisp cucumber and creamy topping.
- Freezer: Freezing assembled bites is not recommended. Cucumbers contain roughly 95% water according to USDA data, and ice crystal formation during freezing ruptures their cell walls, resulting in a limp, waterlogged texture upon thawing. The cream cheese also separates and becomes grainy. For best results, always prepare these bites fresh or store components separately in the refrigerator for assembly within 2 days.
- Oven Reheat: Because these bites are designed to be served chilled or at room temperature, oven reheating is not applicable. Heating would wilt the fresh cucumber, melt the cream cheese into a flat pool, and alter the delicate texture of the smoked salmon. If your bites have been sitting at room temperature longer than 2 hours, the FDA recommends discarding perishable foods rather than attempting to reheat them for safety.
- Microwave Reheat: Microwaving is not recommended for these cucumber rounds. Even 10 seconds of microwave exposure heats the cream cheese unevenly and turns the cucumber rubbery. These bites are intentionally a cold-serve breakfast. Simply remove from the fridge 5 minutes before eating to let them come to a cool room temperature, which allows the herbed cream cheese flavors to bloom naturally.
- Air Fryer Reheat: Air fryer reheating is not suitable for this recipe. The circulating hot air would dehydrate the cucumber’s surface within 2 minutes, shrivel the salmon, and cause the cream cheese to bubble and brown. These bites are best enjoyed cold or at cool room temperature. Focus your air fryer efforts on complementary sides like everything bagel crisps toasted at 350°F for 3 minutes instead.
