Ingredients

  • 2 ripe bananas
  • 3 large eggs
  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup unsweetened peanut butter
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional: nuts or sugar-free chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it or lining it with parchment paper.
  2. In a large mixing bowl, mash the ripe bananas until mostly smooth.
  3. Add the eggs and vanilla extract to the mashed bananas, and whisk until well combined.
  4. In a separate bowl, mix the almond flour, coconut flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredient mixture to the banana mixture, stirring until fully incorporated.
  6. Fold in the peanut butter until the batter is smooth. If desired, mix in nuts or sugar-free chocolate chips.
  7. Pour the batter into the prepared loaf pan, spreading it evenly.
  8. Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted in the center comes out clean.
  9. Remove from the oven and let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
