- 2 ripe bananas
- 3 large eggs
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup unsweetened peanut butter
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- Optional: nuts or sugar-free chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it or lining it with parchment paper.
- In a large mixing bowl, mash the ripe bananas until mostly smooth.
- Add the eggs and vanilla extract to the mashed bananas, and whisk until well combined.
- In a separate bowl, mix the almond flour, coconut flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredient mixture to the banana mixture, stirring until fully incorporated.
- Fold in the peanut butter until the batter is smooth. If desired, mix in nuts or sugar-free chocolate chips.
- Pour the batter into the prepared loaf pan, spreading it evenly.
- Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from the oven and let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
