Ingredients

  • 1/4 cup sugar-free vanilla pudding mix
  • 1/4 cup unsweetened cocoa powder
  • unsweetened almond milk (to achieve dough-like consistency)
  • optional: sugar-free chocolate chips or sprinkles

Instructions

  1. In a large mixing bowl, combine the almond flour and sugar-free vanilla pudding mix. Mix well to ensure there are no lumps.
  2. Gradually add in the unsweetened cocoa powder to the mixture while stirring until fully incorporated.
  3. Pour in a few tablespoons of unsweetened almond milk a little at a time, mixing until the batter reaches a dough-like consistency.
  4. Stir in sugar-free chocolate chips or sprinkles if desired for added flavor and decoration.
  5. Once the dough is formed, scoop out small portions and roll them into balls using your hands.
  6. Place the truffles on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
  7. Optionally, melt some sugar-free chocolate and dip each truffle into it for extra decadence. Place them back on the baking sheet to set.
