- 1 cup almond flour
- 1/4 cup sugar-free vanilla pudding mix
- 1/4 cup unsweetened cocoa powder
- unsweetened almond milk (to achieve dough-like consistency)
- optional: sugar-free chocolate chips or sprinkles
Instructions
- In a large mixing bowl, combine the almond flour and sugar-free vanilla pudding mix. Mix well to ensure there are no lumps.
- Gradually add in the unsweetened cocoa powder to the mixture while stirring until fully incorporated.
- Pour in a few tablespoons of unsweetened almond milk a little at a time, mixing until the batter reaches a dough-like consistency.
- Stir in sugar-free chocolate chips or sprinkles if desired for added flavor and decoration.
- Once the dough is formed, scoop out small portions and roll them into balls using your hands.
- Place the truffles on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
- Optionally, melt some sugar-free chocolate and dip each truffle into it for extra decadence. Place them back on the baking sheet to set.
