Ingredients

  • 1 cup almond flour
  • 1 ½ cups shredded mozzarella cheese
  • 2 tablespoons cream cheese
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave for about 30 seconds to 1 minute until melted and gooey, then stir to combine.
  3. In a separate bowl, mix the almond flour, baking powder, minced garlic, and salt.
  4. Add the melted cheese mixture to the almond flour mixture and mix well until a dough forms.
  5. Beat the eggs in a small bowl and then add them to the dough. Mix until fully combined.
  6. Once the dough is formed, spread it evenly on the prepared baking sheet into a rectangular shape.
  7. Sprinkle the grated Parmesan cheese evenly on top of the dough.
  8. Bake in the preheated oven for about 15-20 minutes or until the edges are golden brown.
  9. Remove from the oven and let cool for a few minutes. Cut into slices and serve warm, garnished with fresh parsley if desired.
