Delicious low-carb Keto Coconut Bars, also known as Keto Lamingtons, made with almond flour, cocoa powder, and shredded coconut.

- 1 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup erythritol or preferred sweetener
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup unsweetened coconut milk
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened shredded coconut for topping
Instructions
- Preheat your oven to 350°F (175°C) and line a small baking dish with parchment paper.
- In a mixing bowl, combine almond flour, cocoa powder, erythritol, baking powder, and salt. Mix well to combine.
- In another bowl, whisk together coconut milk, melted coconut oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until fully combined, forming a batter.
- Pour the batter into the prepared baking dish, spreading it evenly with a spatula.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bars to cool in the dish for about 10 minutes, then transfer to a wire rack to cool completely.
- Once cooled, cut into bars and dip each bar into melted coconut oil and then roll in shredded coconut to coat.
Notes
- Ensure to use unsweetened ingredients to keep the bars low in sugar.
- Store bars in an airtight container for up to a week.
- For an added flavor, you can include chopped nuts or dark chocolate chips.
