Instructions

  1. Ensure cream cheese is softened; microwave for 20-30 seconds if needed. Add eggs, vanilla extract, sweetener, cinnamon (if using), and salt to a mixing bowl.
  2. Blend ingredients using an immersion or regular blender until completely smooth with no lumps.
  3. Sprinkle coconut flour and baking powder over the batter; blend until just incorporated. Let rest for 2-3 minutes.
  4. Heat a non-stick pan or griddle over medium-low heat. Add a small amount of butter or coconut oil and let melt.
