Description

A delicious low-carb twist on the classic Crème Brûlée, perfect for those following a keto diet.


Ingredients

  • 2 cups heavy cream
  • 1/2 cup granulated erythritol
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Additional erythritol for caramelizing

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a saucepan over medium heat, combine heavy cream and erythritol. Stir until erythritol is dissolved and the mixture is warm but not boiling.
  3. In a separate bowl, whisk the egg yolks, vanilla extract, and salt until combined and slightly pale.
  4. Gradually pour the warm cream mixture into the yolk mixture, whisking continuously to avoid cooking the eggs.
  5. Strain the mixture through a fine mesh sieve into a large measuring cup to remove any solids.
  6. Divide the mixture evenly among four ramekins.
  7. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  8. Bake for 30-35 minutes or until the edges are set but the center is still jiggly.
  9. Remove ramekins from the water bath and let them cool to room temperature.
  10. Refrigerate the ramekins for at least 2 hours or until completely chilled.
  11. Before serving, sprinkle a thin layer of erythritol on top of each custard.
  12. Using a kitchen torch, caramelize the erythritol until golden brown and crispy. If you don’t have a torch, place the ramekins under a broiler for a few minutes—watch closely to avoid burning.
  13. Allow the caramelized tops to harden for a few minutes before serving.

  • Ensure the ramekins are heatproof for the water bath.
  • Storage: Keeps well in the refrigerator for a few days, but consume within 2 days for best texture.
