- 2 cups unsweetened almond milk
- 4 large egg yolks
- 1/2 cup granulated erythritol
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a medium saucepan, heat the almond milk over medium heat until it begins to simmer. Do not let it boil.
- In a separate bowl, whisk together the egg yolks, erythritol, vanilla extract, and salt until well combined.
- Gradually pour the warm almond milk into the egg mixture, whisking continuously to temper the eggs.
- Return the mixture to the saucepan and cook over low heat, stirring constantly, until the custard thickens and coats the back of a spoon (about 5 to 7 minutes).
- Remove from heat and strain the custard through a fine mesh sieve into a bowl to remove any lumps.
- Allow the custard to cool at room temperature, then cover and refrigerate for at least 2 hours until chilled and set.
- Serve the custard chilled, and enjoy it on its own or with a sprinkle of cinnamon or sliced berries if desired.
