Ingredients

  • 2 cups unsweetened almond milk
  • 4 large egg yolks
  • 1/2 cup granulated erythritol
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. In a medium saucepan, heat the almond milk over medium heat until it begins to simmer. Do not let it boil.
  2. In a separate bowl, whisk together the egg yolks, erythritol, vanilla extract, and salt until well combined.
  3. Gradually pour the warm almond milk into the egg mixture, whisking continuously to temper the eggs.
  4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until the custard thickens and coats the back of a spoon (about 5 to 7 minutes).
  5. Remove from heat and strain the custard through a fine mesh sieve into a bowl to remove any lumps.
  6. Allow the custard to cool at room temperature, then cover and refrigerate for at least 2 hours until chilled and set.
  7. Serve the custard chilled, and enjoy it on its own or with a sprinkle of cinnamon or sliced berries if desired.
