Ingredients

  • 1 ½ cups almond flour
  • 1/4 cup erythritol or sweetener of choice
  • 1 tsp cinnamon
  • 1/4 cup melted coconut oil
  • 1 large egg

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, erythritol, and cinnamon. Mix well.
  3. Add in melted coconut oil and the egg into the dry ingredients. Stir until a dough forms.
  4. Place the dough between two sheets of parchment paper and roll it out to about 1/4 inch thick.
  5. Cut the dough into rectangular shapes using a knife or pizza cutter.
  6. Transfer the cut pieces onto the lined baking sheet, leaving space between each cracker.
  7. Bake in the preheated oven for 10-12 minutes, until golden brown.
  8. Remove from the oven and allow to cool completely before serving.
