- 1 ½ cups almond flour
- 1/4 cup erythritol or sweetener of choice
- 1 tsp cinnamon
- 1/4 cup melted coconut oil
- 1 large egg
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, erythritol, and cinnamon. Mix well.
- Add in melted coconut oil and the egg into the dry ingredients. Stir until a dough forms.
- Place the dough between two sheets of parchment paper and roll it out to about 1/4 inch thick.
- Cut the dough into rectangular shapes using a knife or pizza cutter.
- Transfer the cut pieces onto the lined baking sheet, leaving space between each cracker.
- Bake in the preheated oven for 10-12 minutes, until golden brown.
- Remove from the oven and allow to cool completely before serving.
