  • 4 chicken thighs, skin-on and bone-in
  • 2 tablespoons chipotle chili powder
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large bowl, mix the chipotle chili powder, olive oil, garlic powder, onion powder, cumin, salt, and pepper to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for more intense flavor.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade, allowing any excess to drip off.
  5. Place the chicken thighs on the grill, skin-side down. Cook for about 6-7 minutes.
  6. Flip the chicken thighs and continue to grill for another 6-7 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Remove from the grill and let rest for 5 minutes before serving.
  8. Garnish with fresh cilantro if desired and serve hot.
