- 4 chicken thighs, skin-on and bone-in
- 2 tablespoons chipotle chili powder
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- In a large bowl, mix the chipotle chili powder, olive oil, garlic powder, onion powder, cumin, salt, and pepper to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for more intense flavor.
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade, allowing any excess to drip off.
- Place the chicken thighs on the grill, skin-side down. Cook for about 6-7 minutes.
- Flip the chicken thighs and continue to grill for another 6-7 minutes, or until the internal temperature reaches 165°F (75°C).
- Remove from the grill and let rest for 5 minutes before serving.
- Garnish with fresh cilantro if desired and serve hot.
