The Keto Grinder Salad offers all the satisfying flavors of an Italian sub without the carbs. It combines fresh iceberg lettuce with deli meats, cheeses, and tangy peppers in a creamy, herb-infused dressing.

- 1 head iceberg lettuce, chopped into bite-sized pieces
- 1 medium tomato, diced
- ½ red onion, thinly sliced
- 6 slices deli turkey (about 3 ounces)
- 6 slices deli pepperoni
- 4 slices Havarti cheese, cut into strips
- 4 slices colby jack cheese, cut into strips
- ½ cup sliced banana peppers
- ⅔ cup mayonnaise
- ¼ cup grated Parmesan cheese
- 2 tablespoons red wine vinegar
- 2 cloves garlic, grated or pasted
- ½ teaspoon Italian seasoning
- ½ teaspoon red pepper flakes
- ½ teaspoon salt
- ½ teaspoon cracked black pepper
Instructions
- In a medium bowl, mix mayonnaise, Parmesan cheese, red wine vinegar, and garlic. Add Italian seasoning, red pepper flakes, salt, and pepper. Whisk until smooth and set aside.
- Chop the lettuce, dice the tomato, and slice the onion. Place in a large salad bowl.
- Cut deli meats and cheeses into strips or bite-sized pieces and add to the salad bowl along with banana peppers.
- Drizzle half of the dressing over the salad. Toss gently until coated, adding more dressing as desired.
- Serve immediately or chill briefly before serving.
Notes
- For extra spice, add thinly sliced jalapeños to the salad base.
- Store dressing in an airtight container for up to 5 days.
- Keep undressed salad components in separate containers for 2-3 days.
