Description

A soft, pillowy, low-carb, and gluten-free bread perfect for keto and paleo diets. This sandwich bread has a classic crusty exterior and tender inside, ideal for everything from toast to grilled cheese.


Ingredients

  • 2 cups almond flour (200g)
  • 1/4 cup coconut flour (30g)
  • 1/4 cup psyllium husk powder (20g)
  • 2 teaspoons baking powder
  • 1 teaspoon xanthan gum
  • 1 teaspoon sea salt
  • 2 tablespoons granulated erythritol (optional)
  • 4 large eggs, at room temperature
  • 1/4 cup unsalted butter, melted and cooled (or coconut oil)
  • 1 tablespoon apple cider vinegar
  • 1/2 cup warm water (105-110°F)
  • 1 tablespoon active dry yeast
  • 1 teaspoon honey or maple syrup
  • 1 egg white, lightly beaten (optional for topping)
  • 1 tablespoon sesame seeds or everything bagel seasoning (optional for topping)

Instructions

  1. Combine warm water with honey or maple syrup, sprinkle yeast on top, and let sit for 8-10 minutes until foamy.
  2. Preheat oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper.
  3. In a large bowl, whisk almond flour, coconut flour, psyllium husk powder, baking powder, xanthan gum, salt, and erythritol.
  4. In a separate bowl, whisk eggs until frothy. Add butter and apple cider vinegar and mix well.
  5. Combine yeast mixture with egg mixture and stir.
  6. Pour wet ingredients into dry and fold together gently until just combined.
  7. Let dough rest for 5 minutes to hydrate.
  8. Transfer dough to loaf pan, smooth top with wet hands or spatula, and make a shallow cut along the center.
  9. Brush top with egg white and sprinkle toppings if using.
  10. Bake for 55-65 minutes until golden brown and a skewer comes out clean. Tent with foil if browning too fast.
  11. Remove from pan and cool completely on a wire rack for at least 2 hours before slicing.
  12. Slice with a serrated knife into 16-18 slices. Store as directed.

  • Use psyllium husk powder, not whole husks, for best texture.
  • Brands like NOW or Terrasoul prevent purple discoloration in bread.
  • Weigh your ingredients for best consistency.
