- 1/4 cup psyllium husk powder (20g)
- 2 teaspoons baking powder
- 1 teaspoon xanthan gum

- 4 large eggs, at room temperature
- 1/4 cup unsalted butter, melted and cooled (or coconut oil)
- 1 tablespoon apple cider vinegar
- 1/2 cup warm water (105-110°F)
- 1 tablespoon active dry yeast
- 1 teaspoon honey or maple syrup
- 1 egg white, lightly beaten (optional for topping)
- 1 tablespoon sesame seeds or everything bagel seasoning (optional for topping)
Instructions
- Combine warm water with honey or maple syrup, sprinkle yeast on top, and let sit for 8-10 minutes until foamy.
- Preheat oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper.
- In a large bowl, whisk almond flour, coconut flour, psyllium husk powder, baking powder, xanthan gum, salt, and erythritol.
- In a separate bowl, whisk eggs until frothy. Add butter and apple cider vinegar and mix well.
- Combine yeast mixture with egg mixture and stir.
- Pour wet ingredients into dry and fold together gently until just combined.
- Let dough rest for 5 minutes to hydrate.
- Transfer dough to loaf pan, smooth top with wet hands or spatula, and make a shallow cut along the center.
- Brush top with egg white and sprinkle toppings if using.
- Bake for 55-65 minutes until golden brown and a skewer comes out clean. Tent with foil if browning too fast.
- Remove from pan and cool completely on a wire rack for at least 2 hours before slicing.
- Slice with a serrated knife into 16-18 slices. Store as directed.

- Brands like NOW or Terrasoul prevent purple discoloration in bread.
