Delicious and easy-to-make keto pork chops with a rich garlic butter sauce, perfect for a low-carb dinner ready in under 30 minutes.

- 4 boneless pork chops (about 1-inch thick)
- Kosher salt (to taste)
- Freshly ground black pepper (to taste)
- 2 Tbsp. extra-virgin olive oil
- 4 Tbsp. unsalted butter
- 4 cloves garlic, finely minced
- 8 oz. baby bella mushrooms, sliced
- 1/2 cup heavy cream
- 1/2 cup finely grated Parmesan cheese
- 1 tsp. dried oregano
- Pinch of crushed red pepper flakes (optional)
- 3 cups packed baby spinach
Instructions
- Remove the pork chops from the refrigerator 15-20 minutes before cooking.
- Pat the pork chops dry with paper towels.
- Season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Cook pork chops in the skillet for 4-5 minutes on each side, or until they reach an internal temperature of 145°F.
- Transfer pork chops to a plate and tent with foil.
- In the same skillet, reduce heat to medium and add butter.
- Add minced garlic and sauté for 30 seconds.
- Add mushrooms and cook for 3-4 minutes.
- Stir in heavy cream, Parmesan, oregano, and red pepper flakes; bring to a simmer.
- Reduce heat to low and let the sauce thicken slightly, stirring occasionally.
- Add spinach and stir until wilted.
- Return pork chops to the skillet and nestle into the sauce.
- Warm through for 1-2 minutes.
- Serve with plenty of sauce over each chop.
Notes
- For extra flavor, add 1/2 tsp of Italian seasoning to your spice blend.
- Storage suggestion: Refrigerate leftovers for up to 3 days.
- Freezing: Freeze pork chops and prepare fresh sauce upon reheating.
