Description

Delicious and easy-to-make keto pork chops with a rich garlic butter sauce, perfect for a low-carb dinner ready in under 30 minutes.


Ingredients

  • 4 boneless pork chops (about 1-inch thick)
  • Kosher salt (to taste)
  • Freshly ground black pepper (to taste)
  • 2 Tbsp. extra-virgin olive oil
  • 4 Tbsp. unsalted butter
  • 4 cloves garlic, finely minced
  • 8 oz. baby bella mushrooms, sliced
  • 1/2 cup heavy cream
  • 1/2 cup finely grated Parmesan cheese
  • 1 tsp. dried oregano
  • Pinch of crushed red pepper flakes (optional)
  • 3 cups packed baby spinach

Instructions

  1. Remove the pork chops from the refrigerator 15-20 minutes before cooking.
  2. Pat the pork chops dry with paper towels.
  3. Season both sides with salt and pepper.
  4. Heat olive oil in a large skillet over medium-high heat until shimmering.
  5. Cook pork chops in the skillet for 4-5 minutes on each side, or until they reach an internal temperature of 145°F.
  6. Transfer pork chops to a plate and tent with foil.
  7. In the same skillet, reduce heat to medium and add butter.
  8. Add minced garlic and sauté for 30 seconds.
  9. Add mushrooms and cook for 3-4 minutes.
  10. Stir in heavy cream, Parmesan, oregano, and red pepper flakes; bring to a simmer.
  11. Reduce heat to low and let the sauce thicken slightly, stirring occasionally.
  12. Add spinach and stir until wilted.
  13. Return pork chops to the skillet and nestle into the sauce.
  14. Warm through for 1-2 minutes.
  15. Serve with plenty of sauce over each chop.

Notes

  • For extra flavor, add 1/2 tsp of Italian seasoning to your spice blend.
  • Storage suggestion: Refrigerate leftovers for up to 3 days.
